Broccoli Slaw

This is one of my tried and true favorite additions to almost any meal.  I often bring this dish to pot-lucks, hosted lunches or dinners and it’s always a hit. 

 

Depending on how easy you want to this to be you can buy a bag of ready made broccoli slaw and simply add the other ingredients.  I just always suggest using organic ingredients whenever possible. 

 

1 Large stalk of broccoli 

1 cup organic carrots- julienne 

1 cup sliced red cabbage

         OR

1 bag ready made Broccoli Slaw 

        

You will also need: 

1/4 cup thinly sliced red onion 

1/4 cup nut of your choice- I prefer sliced almonds or walnuts 

1/3 cup organic raisins or dried cranberries (watch for & avoid added sugar)

1/4 cup honey mustard dressing (INSERT PRIMAL KITCHEN LINK) 

2 Tbs Organic Olive or Avocado oil 

 

Instructions: 

Chop the florets into small pieces yielding 2 cups 

Cut bottoms off of broccoli stalks, peel any rough outer layer off and julienne stems yielding 3 cups

Mix together and add carrots, cabbage, onion nuts and raisins.  

Pour dressing & oil over salad when ready to serve.  Use more or less dressing as desired. 

Delicious as a side or on top of burgers.
